Ingredients
  1. 2-3 mcdi um-sizcd a u bcrgincs
  2. 2 medium-sized onions
  3. 1 green chilli
  4. ¼ teaspoon ground black pepper
  5. 1 tablespoon vinegar
  6. 2 tablespoons salad oil
  7. 1 teaspoon sugar
  8. Salt to taste
Method
  • Cut the aubergines in half, lengthways. Bake in a moderate oven (350° F. — Gas Mark 4) for 40 min-utes until tender. Scoop out the pulp and put in a bowl. Chop the onion and chilli finely and add to the aubergine along with the other ingredients. Mix well and chill for at least one hour before serving.
