Ingredients
  1. 2 avocados
  2. 250g (8 oz) strawberries, hulled
  3. mint or strawberry leaves, to garnish
  4. HONEY LEMON DRESSING:
  5. 2 tablespoons sunflower oil
  6. 2 teaspoons lemon juice_
  7. ¼ teaspoon paprika
  8. salt and pepper
Method
  • To make the dressing, put all the ingredients in a bowl or screw-top jar and mix well. Set aside
  • Cut avocados in half, remove stones and peel. Dice the flesh and put into a bowl. If strawberries are large, slice or halve them, then add to avocado. Pour over dressing and toss together.
  • Divide between 4 dishes and serve garnished with leaves.
