INGREDIENTS

2 avocados
1 tablespoon lemon juice
250 g white crabmeat, well drained if canned and flaked
Fresh chervil sprigs, to garnish
Brown bread and butter, to serve
SEAFOOD SAUCE:
60 ml Mayonnaise
1 tablespoon tomato ketchup (sauce)
½ teaspoon Worcestershire sauce
60 ml single (light) cream
2 teaspoons lemon juice
1 teaspoon dry sherry
Pinch cayenne pepper

METHOD

Halve the avocados, remove the stones, then peel. Slice and brush with lemon juice to prevent discoloration. Then arrange the slices on 4 plates.

To make sauce, mix ingredients together in a bowl, then fold in crabmeat.
Divide the crabmeat mixture between the plates, then garnish each the sprigs of fresh chervil. Serve the salads with brown bread and butter.
