Ingredients
  1. 2 avocados
  2. 1 tablespoon lemon juice
  3. 250 g white crabmeat, well drained if canned and flaked
  4. Fresh chervil sprigs, to garnish
  5. Brown bread and butter, to serve
  6. SEAFOOD SAUCE:
  7. 60 ml Mayonnaise
  8. 1 tablespoon tomato ketchup (sauce)
  9. ½ teaspoon Worcestershire sauce
  10. 60 ml single (light) cream
  11. 2 teaspoons lemon juice
  12. 1 teaspoon dry sherry
  13. Pinch cayenne pepper
Method
  • Halve the avocados, remove the stones, then peel. Slice and brush with lemon juice to prevent discoloration. Then arrange the slices on 4 plates.
  • To make sauce, mix ingredients together in a bowl, then fold in crabmeat.
  • Divide the crabmeat mixture between the plates, then garnish each the sprigs of fresh chervil. Serve the salads with brown bread and butter.
