INGREDIENTS

1 California Avocado
1 small Red Onion
1/2 Jalapeno Peppers
2 tbsps Fresh Lime Juice
1 small whole (2-2/5" dia) Red Tomatoes
1/8 cup Cilantro (Coriander)
1/8 tsp Salt
1/8 tsp Black Pepper

METHOD

Wear rubber gloves when handling chile peppers and be careful not to touch your eyes. Remove the seeds to keep the "fire" under control. Serve with simple chicken, fish or shellfish dishes or as a dip.

1- Chop the tomato. Finely dice the onion and jalapeno.
2- Gently combine avocado, onion, jalapeño and lime juice. Do not mash.
3- Fold in tomato and cilantro and season with salt and pepper.
4- Cover and refrigerate until ready to serve.
