Ingredients
  1. 1 1/2 kg brinjals
    •   ½ cup tahini
    •   Juice of 1 lemon
    •   1 clove of garlic, minced
    •   Salt to taste
Method
  • Grill brinjals on an open flame or in the oven till skin ischar grilled.  Remove and place on a plate and let them cool completely.Drain juices, remove skin and place the aubergine pulp in a foodprocessor. Add the garlic, lemon juice, salt, and tahini and pulse forabout a minute or till soft and smooth. Season with more lemon juice andsalt according to your taste. Transfer to bowl, garnish with mint andolive oil. Serve with warm pita  bread.
