  1. • EGGPLANT LARGE 1 EA
  2. • GRATED CHEESE MILD CHEDDAR 1/2cup
  3. • OLIVE OIL 1/4 cup
  4. • GARLIC 1
  5. • BUTTER 2 tbsp
  6. • SEA SALT 1 1/2tsp
Method
  • CUT THE LARGE EGGPLANT IN HALF SCOOP THE PULP OUT
  • GRATE THE CHEESE COOKING BRING THE OLIVE OIL ON MEDIUM HEAT IN A DEEP SKILLET ADD PULP AND GARLIC AND FRY UNTIL CARAMELIZED. WHEN READY SCOOP BACK THE COMBINED MIXTURE INTO THE EMPTY HALFED EGGPLANT WITH THE GRATED CHEESE ON TOP. BAKE IN THE HOT OVEN UNTIL THE CHEESE IS MELTED. THE DISH IS READY TO BE SERVED; WITH RICE, PASTA OR PITA BREAD.
