Ingredients
  1. 2 green chillis
  2. 1 bunch coriander leaves
  3. 2 cloves garlic
  4. ½ inch fresh root ginger
  5. ½ teaspoon ground cummin seeds
  6. Pinch of turmeric powder
  7. 10 egg whites 5 5 egg yolks
  8. 2 teaspoons flour salt to taste
  9. 4 oz. peeled shrimps
  10. Knob of butter
Method
  • Very finely mince the chillis, coriander leaves, garlic and ginger and mix with ground cummin and turmeric powder. Put egg whites in a mixing bowl and whisk till stiff, add egg yolks and beat again. Stir in the flour and add the spices, salt and shrimps. Heat the butter in a frying pan and pour in egg mixture. Cook, stirring quickly, till slightly thicken¬ed. Then pour into a baking dish and bake in a moderate oven (350° F. — Gas Mark 4) for 15 minutes or till set. Serve with puns or cut into strips and roll in chappatis
