Ingredients
  1. 4 Leeks
  2. 1 Fennel Bulb
  3. 1 cup Chicken Broth, Bouillon or Consomme
  4. 1 tsp Salt
  5. 1/2 tsp Black Pepper
  6. 3 tbsps Unsalted Butter Stick
  7. 1 tbsp Fresh Lemon Juice
  8. 1/3 cup Parsley
Method
  • 1- Preheat oven to 450°F.
  • 2- Place leeks, fennel, broth, salt and pepper in a 11- by 9-inch pan. Dot with butter and cover pan with aluminum foil.
  • 3- Bake 15 minutes. Uncover, stir lightly and bake uncovered until vegetables are very tender and liquid is almost all gone, about 20 minutes.
  • 4- Mix in lemon juice and parsley.
