Ingredients
  1. 500g boneless skinless chicken breasts, thinly sliced
  2. 1 tbsp peanut oil
  3. 3/4 cup shitake mushrooms, thinly sliced
  4. 1 can water chestnuts, drained and diced
  5. 1 tablespoon minced fresh ginger
  6. 1 1/2 cups carrots, shredded
  7. 1/2 cup green onions, julienned
  8. 12 Boston or Iceberg lettuce leaves
  9. 1/3 cup peanuts, chopped
  10. 1 bunch coriander leaves, roughly chopped
  11. Dressing
  12. 2 tbsp rice vinegar
  13. 1 1/2 tsp peanut oil
  14. 2 tbsp teriyaki sauce
  15. 1 tbsp soy sauce
  16. 1/2 tbsp garlic powder
  17. 1/4 tbsp crushed red pepper flakes
Method
  • In a non stick wok, stir fry chicken with peanut oil, cook for 3-5 minutes; drain. Add mushroom, water chestnuts and ginger, and cook for an additional 5 minutes. Drain and keep aside.
  • In a small bowl, mix vinegar, teriyaki sauce, soy sauce, garlic powder, red pepper flakes and peanut oil.
  • Mix carrots, onions, chicken mixture, coriander, peanuts and dressing.
  • Spoon into lettuce and serve.
