Ingredients
  1. Ingredients for base
    Digestive biscuits 8 ounces crushed
    Walnuts finely chopped  4 tbsp
    Butter melted  100 gm
    Ingredients for filling
    Curd cheese  8 ounces
    Cream cheese 4 ounces
    Caster sugar  10 tbsp
    Lemon juice  1 tbsp
    Orange juice 1/4 cup
    Eggs  3
    Gelatin  2 tbsp leveled
    Orange essence  1/4 tsp
    Orange color   few drops
    Fresh cream whipped 8 ounces
    Ingredients for topping
    Orange jelly  1 packet dissolved in 3/4 cup water
    Mandarin slices
    Fresh cream whipped
Method
  • Crush the biscuits mix them with chopped walnuts and melted butter and press into a base of a well greased 9 inch spring foam pan and bake for 10 minutes
    Dissolve gelatin in ¼ cup orange juice. beat curd cheese, cream cheese and egg yolk with 6 tbsp of caster sugar, beat till well mixed add dissolve gelatin and orange color
    Beat egg white with the remaining 4 tbsp caster sugar until stiff. Fold into cream mixture
    Whip cream till stiff, fold into the cheese mixture, mix all well, and pour over the biscuit base, chill until set
    Top with orange jelly cubes, mandarin slices and whipped cream
    Serve chilled.
