Ingredients
  1. Flour 150 gm
    Sugar 150 gm
    Egg 5
    Baking powder ½ tbsp
    Vanilla essence few drops
    White butter 250 gm
    Fresh cream 50 gm
    Desiccated coconut 100 gm
    Icing sugar 4 tbsp
    Sugar syrup ½ cup
    Pineapple chopped 1 cup
    Red syrup ¼ cup
Method
  • In a bowl beat together 5 eggs and 150 gm sugar, then add I 150 gm flour, ½ tbsp baking powder and few drops of vanilla essence.
    Spread mixture in a greased lined round mold.
    Bake in a preheated oven for 35 – 40 minutes.
    In a bowl beat together 250 gm white butter, 50 gm fresh cream and 4tbsp icing sugar. Keep in refrigerator.
    Finely chop 1 cup pineapples and keep aside.
    Remove cake from oven, cut into 2 halves, Spread each with sugar syrup.
    Spread one piece with a little red syrup. Then spread chopped pine apples. Cover with the other half, coat every side with whipped cream.
    Garnish with red syrup. Sprinkle with desiccated coconut.
    Refrigerate for 60 – 90 minutes and then serve.
