Ingredients
  1. 4 tiny artichokes
  2. 125 g (4oz) thin green beans, trimmed if desired
  3. 1 lettuce
  4. 1 head fennel
  5. ½ bunch radishes
  6. 2 carrots, finely granted
  7. ½ quantity garlic vinaigrette
  8. 1 quantity garlic mayonnaise
  9. Fennel fronds, to garnish
Method
  • Trim artichoke stalks, then cook in a saucepan of simmering water for 25-30 minutes, until tender. Drain and cool. Cook beans for 3 minutes. Drain and cool.
  • To assemble salad, arrange a few lettuce leaves, to one side,on 4 plates. Slice fennel and arrange at tractively with beans, radishes and carrot.
  • Remove a few outer artichoke leaves and arrange on plates. Cut artichokes in half, remove the hairy chokes. Place 2 halves on each plate. Spoon a little garlic dressing into each half. Garnish with fennel fronds. Serve salads with garlic mayonnaise.
