Ingredients
  1. 3 pints (U.S. 74 cups) Jersey milk
  2. 4 oz. sugar
  3. ½ teaspoon grated nutmeg
  4. 1 oz. almonds, blanched
  5. 1 oz pistachio nuts
Method
  • Boil milk rapidly in a heavy saucepan, stirring all the time, till reduced to 1 pint (U.S. 2i cups). This takes approximately 1 hour. Add sugar, stir to dissolve and cook for a few more minutes. Re¬move from the heat and allow to cool. Add nut¬meg, stir and pour into a serving dish, scraping cream from sides of the pan. Coarsely grate the nuts and sprinkle on top. Serve chilled.
