INGREDIENTS

1 ½ lb. lamb or beef
2 onions
1-inch fresh root ginger
2 garlic cloves
2 tomatoes
4 potatoes
Oil for frying
1 teaspoon turmeric powder
1 teaspoon garam masala
2 teaspoons ground coriander seeds 4 cloves
2 cardamoms
1 teaspoon chilli powder
1 cartoon yoghurt
Salt to taste

METHOD

Trim the meat and cut into li-inch cubes. Slice the onions; finely mince the ginger and garlic; chop the tomatoes and quarter the potatoes if they are particularly large. Heat some oil in a saucepan and fry the onions until pale golden. Then add the minced ginger and garlic together with the dry spices. Fry for 10 minutes and add meat and cook till brown and dry. Add tomatoes and yoghurt to the meat and simmer for 20 minutes until the meat is almost cooked. Add the potatoes, season with salt and cook till the potatoes are done.
