Ingredients
  1. Flour 1cup
  2. Baking powder ¼ tsp
  3. Corn flour ¼ cup
  4. Salt ¼ tsp
  5. Unsalted butter 2-1/2 oz
  6. Granulated sugar 150 gram
  7. Vanilla essence ½ tsp
  8. Butter milk ½ cup (milk ½ cup +vinegar 1tbsp)
  9. Green color 1tbsp
  10. Baking soda ½ tsp
  11. Vinegar ½ tsp
  12. Ingredients for cream cheeses icing
  13. Cream cheese 6 ounces
  14. Pure vanilla ½ tsp
  15. Sugar 1cup
  16. Whipped cream 1cup
  17. Green color few drops
Method
  • Preheat oven to 350 degree and line 12 muffins with paper cupcake liners
  • In a large bowl add flour, baking powder and salt.
  • Beat the butter until soft.
  • Add the sugar and beat until light and fluffy. Add the eggs and beat until incorporate.
  • Add the vanilla and beat until combined
  • In a measuring cup whisk the bitter milk with green food color. With mixer add the flour mixture and butter milk to the butter mixture, in three additions, beginning and ending with flour
  • In a small cup combine the vinegar and baking soda .allow the mixture to fizz and then quickly fold into the cake batter.
  • Divide the batter among 12 muffin cups and smooth the tops .bake in pre heated oven for 18-23 min, or until a tooth pick is inserted in the centre of cup cake.
  • Cool the cakes in their pans on a wire for 10 min and then remove from pan .let cool completely before frosting with knife or use star decorating tip to pipe the frosting.
  • Cream cheese frosting:
  • Beat the cream cheese until smooth. Add the vanilla and icing sugar and beat until smooth .using the whisk attachment, gradually add heavy cream and whip until the frosting is thick enough to pipe.
  • Add more sugar or cream and green color as needed to get right consistency
