Lamb Shank with Saffron

3 - 4 lamb shank
1 large onion, thinly sliced
1 tsp cinnamon
1 tsp turmeric
½ tsp cardamom powder
¼ tsp saffron
2 tsp pepper
4 tsp salt
3 cups water
2 tbsp tomato paste (optional)
Season the lamb shank with salt and pepper. In a large frying pan brown each side of the lamb and set a side.
In a large pressure cooker, sauté onion with a bit of oil until the onion is translucent
in colour. Add lamb shanks and season with cinnamon, cardamom powder, turmeric, salt and pepper, mix for a minute. Then add water, saffron powder and tomato paste.
Cover pressure cooker and allow to cook on low heat for 30 minutes.
Before removing lid of pressure cooker, make sure that all the steam has been removed to safely open the pot.
Serve, excellent with Baghali Polo.
