Ingredients
  1. • Chicken (boneless) ½ kg
  2. • Rice (soakes) ½ kg
  3. • Green tomatoes (cut in rounds) 1/2kg
  4. • Green chillies 50 grams
  5. • Star aniseeds 2
  6. • Green cardamoms 4
  7. • Bay leaves 2
  8. • Black peppercorns 1tsp
  9. • Red Chilli powder 1tsp
  10. • Cumin seeds 2tsp
  11. • Ginger/ garlic paste 2 tsp
  12. • Cream 1 cup
  13. • Yogurt 1 cup
  14. • Mint leaves (chopped) 2 bunches
  15. • Screwpine 1tsp
  16. • Yellow food colour ½ tsp
  17. • Salt 1tsp
  18. • Butter 50 grams
  19. • Oil ½ cup
Method
  • • Marinate chicken with yogurt, salt, cream, black pepper, cumin, star aniseeds, red chillies, cardamoms and ginger/garlic pate for an hour.
  • • Heat oil in a pot .Add tomatoes and fry for a while. Add chicken and cook for 20 minutes on medium falme in a separate pot heat butter and add green chillies, salt bay leaves and rice with water. Cook until water dries .
  • • Make space in centre of cooked rice.
  • • Place chicken, mint screwpine and food colour in the centre and put on dum. Smoke ingredients before serving.
