Ingredients
  1. 4 aubergines
  2. 3 green Chilies
  3. 1 onion
  4. 1-inch fresh root ginger oz. creamed coconut
  5. ½ pint water
  6. 2 tablespoons vinegar salt to taste
Method
  • Core the aubergines, and simmer in a little water until tender. Cut into wedges. Skin the onion. Mince or grate the chillis, onion and the fresh root ginger as finely as possible, then mix with the aubergine along with the creamed coconut. Gra¬dually add the water and simmer for approxim¬ately 7 minutes, stirring occasionally. Add the vinegar and the salt, stir well and serve hot.
  • Note: Preparation time 15 minutes, Cooking time 25 minutes, TO serve 4
