Mixed Vegetables and Lentils

1 lb. mixed vegetables (yam, gourds, beans, carrots, cauliflower etc.)
4 oz. yellow dhal
¼ teaspoon freshly ground pepper
1 teaspoon turmeric powder
salt to taste
½ -inch slice of creamed coconut
1 teaspoon molasses
oil for frying
1 teaspoon mustard seeds
2 red chillis
2 curry leaves or bay leaves
Chop the vegetables into small pieces. Wash the dhal thoroughly. Put the dhal and vegetables in a pan together and barely cover with water. Simmer gently until cooked. Season with pepper, turmeric and salt. Add coconut and cook for a further 10 minutes. Remove from the heat and add molasses. In another pan fry the mustard seeds, chillis and curry leaves for a few minutes. Add to the vegetabl¬es, mix well and serve with plain boiled rice.
