Ingredients
  1. Flour 1 ½ cup
    Salt ¼ tsp
    Butter 4 ounces
    Sugar 4 tbsp
    Egg yolk 1
    Chilled water to knead
    Ingredients for filling
    Sugar 1 cup
    Flour 1 tbsp heaped
    Corn flour 2 tbsp
    Pinch of salt
    Orange color few drops
    Orange juice ½ cup
    Lemon juice 1 tbsp
    Water 1 cup
    Butter 1 tbsp
    Eggs 3 separated
    Vanilla ½ tsp
    Cream of tartar ¼ tsp
Method
  • In a bowl combine the flour, salt, sugar add in butter, with finger tips until mixture resembles bread crumbs, add egg yolks mix, add chilled water and knead lightly until combined, sprinkle flour on table and form mixture into a dough, chill for 30 minute, preheat oven to 180 degree C on a lightly floured surface, roll the dough into a round, about 1/8 inch thick, transfer the pie into large pan, gently fit into the pan, prick the bottom and sides of the pan with fork, bake for 15 minutes.
    Method for filling
    In a sauce pan mix ¾ cup sugar with flour, corn flour and salt add orange juice, lemon juice and water, bring a mixture to a boil add in the butter, remove the pan from heat, lightly beat in the egg yolks and whisk well, cook over medium heat until filling is thick and glossy about 5 minutes.  Remove, cool, spread it on the baked pie shell, keep aside. Preheat oven to 180 degree C, beat the egg whites and cream of tartar to soft peaks, add remaining ¼ cup sugar, continue to beat until stiff peaks forms, gently spread the meringue over hot filling, spread it to the edges of the crust, bake until meringue is lightly brown for 10 minutes, cool and serve.
