Ingredients
  1. 500g topside beef
  2. 2 cups of water
  3. 1 large onion
  4. 3 garlic cloves
  5. 1 carrot, chop
  6. 1 celery stick, chop
  7. Salt
  8. Pepper
  9. 3 tbsp cornstarch
  10. Mushrooms, thinly slice (optional)
  11. Side:
  12. 500g string beans
  13. 4 shallots, thinly sliced
  14. Roasted almonds
  15. Sea salt
  16. Fresh Pepper
Method
  • Rub beef with fresh ground sea salt and black pepper. In a large frying pan, on high heat brown each side of the beef and set aside.
  • In a large pressure cooker put the beef and add water, carrots, onion, garlic cloves and celery. On medium heat cook for 15 minutes for rare meat, 20 minutes for medium meat, and 35 minutes for well done.
  • To make the gravy, place the roast on the side and drain the juice in a small pot, separating it from the cooked vegetables. Add mushrooms and cook for 3 minutes.
  • In a small cup mix ½ a cup of water with cornstarch and then add to the small pot.
  • Mix for 5 minutes until the gravy has thickened.
  • To make the string beans with caramelized shallots, steam cook your string beans for 5 to 7 minutes.
  • In a medium size pot, sauté shallots until golden brown, add steamed string beans and season with salt and pepper. Garnish with roasted almonds.
