Ingredients
  1. 4 firm ripe peaches, cut into quarters
  2. 2 tbsp butter, melted
  3. 2 tbsp sugar
  4. 1tsp vanilla extract
  5. Vanilla ice cream
  6. Raspberry’s
Method
  • Pre-heat oven at 200 degrees C. Mix butter, sugar and vanilla and coat the peaches.
  • Roast in oven for 10 to 15 minutes (alternatively you can grill the peaches on the bbq or stove top).
  • To serve, place roasted peaches on the base of a cup, add vanilla ice cream and top with fresh raspberries.
