Ingredients
  1. ½ kg pumpkin
  2. ½ tsp dried fenugreek
  3. 2 tblsps oil
  4. 1 tsp red chili powder
  5. a little guy
  6. ½ tsp amchur or two tomatoes
  7. 1 tsp coriander powder
  8. salt, turmeric and asafoetida to taste
Method
  • Peel and cut the pumpkin into l pieces. Heat the fenugreek and oil in a kadai. When it browns add asafoetida and pumpkin, salt, turmeric and half a cup of water. Stir and cover. Cook on medium heat. When tender add gur and amchur or tomatoes. Keep on the fire for a few more minutes, then remove and serve. This goes well with chapatis. (The same recipe may be used for brinjal, white gourd and cucumber.)
