Ingredients
  1. Chicken with skin 1 whole
    Chicken mince 375 gm
    Onion 1
    Egg 1
    Tomatoes chopped 2
    Capsicum half
    Boiled peas ½ cup
    Parsley chopped ¼ bunch
    Coriander leaves chopped ¼ bunch
    Raisin 50 gm
    Green olives chopped 8 – 10
    Salt to taste
    Black pepper powder ½ tsp
    Ingredients for Marinade
    Papaya paste 2 tbsp
    Lemon juice 2 tbsp
    Chili powder 1 tbsp
    Crushed red pepper 1 tbsp
    Turmeric 1 tbsp
    Ginger garlic paste 2 tbsp
    Cumin seeds ground 1 tbsp
    Oil 2 – 3 tbsp
    Clay soil 1 kg
    Flour 750 gm
    Egg 3
    Butter paper as required
Method
  • Mix together clay soil, 750 gm flour and 3 eggs. Knead to dough with water as required.
    In chopper put together chicken mince, 1 onion, coriander leaves, parsley, salt, black pepper and chopperize finely.
    Remove mince mixture in a bowl, add ½ cup boiled peas, chopped capsicum, chopped tomatoes, salt to taste, black pepper powder, coriander leaves, green olives, raisins and parsley. Mix well and keep the stuffing mixture aside.
    Debone a whole chicken from its back, don’t cut any piece, chicken should be remain whole.
    Marinate chicken with 2 tbsp ginger garlic paste, 2 tbsp lemon juice, 2 tbsp papaya paste, 1 tbsp chili powder, 1 tbsp crushed red pepper, 1 tbsp turmeric, 1 tbsp ground cumin seeds, salt to taste and a little oil.
    Marinate inside and outside very well with the marinade ingredients.
    Now stuff chicken with mince vegetable mixture. Roll thread onto the chicken.
    Wrap chicken in butter paper, now make a layer of clay dough onto chicken, cover the chicken very well so that no part is left uncovered.
    Now bake in a preheated oven on 150 degrees for 25 – 30 minutes.
    Remove chicken from the oven, break the clay crust. Remove butter paper and tread.
    Serve whole chicken or cut into pieces.
