SPICED FRIED POTATOES (BHUNA ALOO)
• 1 lb. small new potatoes pomegranate seeds (optional) 1 teaspoon garam masala
• 1 teaspoon chilli powder salt to taste
• Oil for frying
Wash the potatoes but do not peel. Rub them with the pomegranate seeds if used, garam masala, chilli powder and salt. Heat some oil in a large shallow frying pan and fry the potatoes until cooked, drain well. Sprinkle with the chopped parsley and serve very hot. If preferred the potatoes can be deep fried.
