Ingredients
  1. butter for frying
  2. 1 large onion, sliced finely
  3. 2 tomatoes, skinned and chopped
  4. 3 green chink, chopped
  5. 1 tablespoon chopped coriander Leaves
  6. ½ teaspoon turmeric powder salt to taste
  7. 8 eggs
  8. 4 slices hot buttered toast
Method
  • Melt some butter in a pan and gently fry the onions till golden. Add the tomatoes, chillis, coriander leaves, turmeric and salt and fry till tomatoes are cooked. Add the beaten eggs and cook on a low heat till eggs are scrambled. Serve on the toast.
