Ingredients
  1. FOR THE PURIS
  2. 8 oz. whole meal or plain flour 1 teaspoon salt
  3. ¼ teaspoon ground coriander
  4. ¼ teaspoon turmeric powder
  5. ¼ teaspoon chilli powder
  6. Water to mix
  7. FOR THE FILLING
  8. 4 oz. cauliflower, cooked
  9. 1 tablespoon dessicated coconut, soaked in
  10. 1 tablespoon hot water
  11. 1 oz. peanuts
  12. 2 green chillis
  13. 1 teaspoon chopped coriander leaves
  14. juice of ½ lemon
  15. ½ teaspoon sugar
  16. Salt to taste
  17. Oil for frying
  18. FOR THE SAUCE
  19. 2 green chillis
  20. * 1 oz. tamarind, soaked in 6 tablespoons boiling water 1 tablespoon molasses
  21. ½ teaspoon mustard seeds oil for frying
  22. pinch of salt
Method
  • * When the tamarind is soft squeeze and discard the husk. Strain the liquid before use.
  • Make the puns by sieving the dry ingredients into a mixing bowl. Then add sufficient water to make a firm dough. Knead well till dough is smooth. Divide into 16 equal portions. Shape each portion into a ball, flatten and roll, on a well-floured board, into thin pancakes. For the filling put the cauli¬flour in a bowl, mash, chop coriander leaves finely and add to cauliflour with remaining ingredients. Mix well and put equal quantities in the centre of half the puns, dampen the edges and place the remaining puns on top. Press down edges, and seal. Put tamarind water, chillis and molasses into a small pan and simmer gently for 20 minutes. Fry the mustard seeds in a little oil. When they turn white add them to the ingredients in the pan. Cover and bring to the boil then remove from heat. Deep fry the puns in hot oil. Drain and serve with the Chilli Sauce.
