Ingredients
  1. 1 can black beans, drained and rinsed
  2. 1 can kidney beans, drained and rinsed
  3. 1 can fire-roasted diced tomatoes or 1 1/2 cup diced fresh tomatoes
  4. 1 can tomato paste
  5. 1 large sweet potato, diced
  6. 1 cup dry quinoa
  7. 1 onion, diced
  8. 5 to 6 garlic cloves, minced
  9. 1 tbsp olive oil
  10. 1 1/2 tbsp chili powder
  11. 1 tbsp cumin
  12. 1 tsp dried oregano
  13. Few dashes of garlic powder
  14. Few dashes of onion powder
  15. Himalayan salt (to taste)
  16. 4 cups water or vegetable broth
  17. Avocado, cilantro and/or diced onion, for garnish
Method
  • In large pot or dutch oven, heat oil over medium heat. Add onions, cook until soft and they start to turn brown (about 7 to 10 minutes).
  • Add garlic, cook for another minute or so. Add the remaining ingredients, bring to a boil, cover slightly ajar, reduce heat and cook for 30 to 40 minutes. Stir occasionally.
  • Chili is ready when sweet potatoes are tender. Add additional water if chili is too thick for your liking. Serve with optional garnishes.
