500 g (1 lb) turkey escalopes
2 tablespoons virgin olive oil
1 small onion, chopped
125 g (4 oz) fresh or frozen cranberries
grated peel of ½ orange
orange slices and watercress sprigs, to garnish
MARINADE:
juice of 1 lime
125 ml (4 fl oz/ ½ cup) dry vermouth
2 teaspoons clear honey
½ teaspoon dry oregano
salt and pepper
Cut the turkey escalopes into thin strips. Mix marinade ingredients together in a bowl. Add turkey strips and marinate for 2 hours.
Remove turkey from marinade with a slotted spoon; reserve marinade. Heat oil in a frying pan, add turkey and onion and saute for 5 minutes. Pour reserved marinade into the pan with the cranberries and orange peel and cook gently until the cranberries begin to split. Transfer the mixture to a dish to cool.
Stir the salad and spoon into a serving dish. Serve garnished with orange slices and sprigs of watercress.
