Ingredients
  1. • 8 oz. okra
  2. • 2 green chillis
  3. • 1-inch fresh root ginger
  4. • 1 dessertspoon fresh coriander leaves oil for frying
  5. • ½ teaspoon turmeric powder
  6. • 5 cartons yoghurt
  7. • salt to taste
  8. FOR THE GARNISH
  9. • Coriander leaves
Method
  • Slice okra into rings. Mince chillis, ginger and coriander leaves. Heat some oil in a pan and fry okra for five minutes. Add turmeric and salt and fry for a further two minutes before adding chillis and ginger. Continue cooking gently till okra is tender. Meanwhile put yoghurt in a bowl and beat well with salt. Add to the okra, mix and garnish with coriander leaves.
  • Note: Preparation time 5 minutes, Cooking time 20 minutes, To serve 4
