Ingredients
  1. • Oil for frying
  2. • 1 lb. okra cut in half
  3. • Salt to taste
  4. • 1 teaspoon turmeric powder
  5. • 1-inch fresh root ginger, finely minced
  6. • 1 ½ cartons yoghurt
  7. • 1 heaped tablespoon desiccated coconut,
  8. • Soaked in 1 tablespoon hot water
  9. • ¼ teaspoon chilli powder
  10. • 1 teaspoon fresh coriander leaves, chopped
Method
  • Heat some oil in a saucepan and fry the okra for five minutes. Add salt, turmeric and ginger and fry well for 10 minutes, till okra is cooked. Beat the yoghurt with the coconut, chili powder and coriander leaves. Add to the okra, bring to the boil, lower heat and simmer for a few minutes.
  • Note: Preparation time 10 minutes, Cooking time 25 minutes, To serve 4
