Blanched zucchini

Wash the zucchini thoroughly and then peel or unpeel it. Chop them as desired - cubed, sliced, roundels or julienne. Put into a saucepan of boiling water. Boil for 10 minutes, then drain off the water and use as desired. To retain the colour of the carrot you can add a pinch of salt and soda to the boiling water and after boiling to enhance its colour and for maximum freshness, immerse it in cold water for another 5 mins and then drain again.
