Apricot jam

Making jam is much easier than most people think. Jamming basically involves boiling fruits with lots of sugar and some lemon juice, cooking it, and pouring it into clean canning jars. Apricots do not have very much pectin, and the addition of the citrus provides this ingredient, plus giving the jam a lovely tang. The cooking will soften them and bring out their flavor. For making jam at home, carefully sort and wash the apricots. Halve them and discard the pits, making sure to get rid of the stem end.
