Ingredients
  1. 1 eggplant
  2. 2-3 cloves garlic, crushed
  3. juice of 1/2 lemon
  4. 1 tablespoon olive oil
  5. 1/2 cup tahini (sesame paste)
  6. 1/2 cup chopped parsley
Method
  • 1.Place eggplant in the oven for 30 minutes at 250° F, turning
  • occasionally.
  • 2.Peel the eggplant and mash in a bowl with a wooden spoon.
  • 3.Add remaining ingredients (garlic, lemon juice, olive oil, and
  • tahini) and mix well.
  • 4.Garnish with chopped parsley.
  • Note: Cooking Time: 40-45 minuts, Serving: 3-4 persons
