Ingredients
  1. 1 cup fresh dates, remove stones1 tsp baking soda
  2. ½ cup unsalted softened butter
  3. ¾ cup caster sugar
  4. 2 large free-range eggs
  5. 1 ¾ cup all-purpose flour
  6. 1 tsp baking powder
  7. ¼ tsp ground nutmeg
  8. ¼ tsp ground cinnamon
  9. 2 tsp cocoa powder
  10. 2 tbsp natural yoghurt
  11. ¼cup pecans chopped
  12. For the toffee sauce
  13. ½ cup unsalted butter
  14. ½cup light muscovado sugar
  15. ½ cup double cream
Method
  • Preheat over at 180ºC/350ºF. Put the dates and baking soda in a bowl and cover with 1 cup of boiling water. Leave to stand for a couple of minutes to soften, then drain. Puree in a food processor.
  • In a mixing bowl, cream butter and sugar, and add the eggs, flour, baking powder, nutmeg, cinnamon and cocoa powder. Mix together well and fold in the yoghurt, pureed dates and pecans.
  • Pour into six buttered, ovenproof ramekin dishes and bake for 20 -25 minutes.
  • To make caramel sauce, mix butter, sugar and cream in a medium sized pan over a low heat for about 15 – 20 minutes, until the sauce has thickened and darkened in colour
  • Add sauce over pudding and enjoy.
