Ingredients
  1. 4 large eggs
  2. 1 big can of Nestle carnation brand (approx 400gms) unsweetened evaporated milk (NOT condensed sweet milk),
  3. 1/4 cup sugar (Brown/white)
  4. 1/2 cup water.
  5. for Caramel: : 1/2 cup sugar & 1/4 cup water
Method
  • Beat the eggs slightly.
  • Now add evaporated milk, and water.
  • Beat it slightly and add sugar.
  • Beat until sugar is dissolved.
  • For caramel:put sugar and water in a pan and cook until the dark brown bubbles start appearing.
  • Quickly but very carefully pour the caramel in the ramekins and spread it along the sides as well. caramel sets very quickly.
  • Now pour the prepared egg and milk mix in the ramekins don't over fill them as it will expand on cooking.
  • Put enough water in a large pot so as to come up to mid of the ramekins.
  • Put the lid on the pot and cook on high heat for 15-20 min.
  • let it cool down and then remove from pot.
  • Cool in fridge for minimum 1/2 hr.
  • Release edges with butter knife and invert in a serving dish..
  • No essence or vanilla bean is added in it, it will have actual caramel taste and it is a very tasty pudding.
