Ingredients
  1. 2 tbsp sunflower oil
  2. 2 small cloves of garlic, peeled and sliced
  3. 1/2 tsp grated ginger
  4. 1 tsp lemon grass, finely chopped
  5. 200g (7oz) crab meat
  6. 500ml (18fl oz) fish or light chicken stock
  7. 1 x 165g tin coconut milk
  8. 1 tbsp fish sauce (nam pla)
  9. 50g (2oz) raw prawns, peeled
  10. 2 spring onions, trimmed and finely sliced
  11. Juice of 1/2 lemon
  12. 1/4 red chilli, deseeded and finely chopped
  13. 1 tbsp chopped fresh coriander (leaves and stalks)
  14. Salt and freshly ground black pepper
Method
  • 1 In a large saucepan on a medium heat, heat the oil, then add the garlic, ginger, lemon grass and crab meat. Toss on the heat for a few minutes until light golden. Add the stock, coconut milk and fish sauce. Bring to the boil, reduce to a simmer and add the prawns.
  • 2 Cook for 1-2 minutes (simmering all the time) until the prawns are cooked. Then add the spring onions, lemon juice, chilli and coriander, season to taste and serve.
