Ingredients
  1. 375 g (12 oz) white or light green cabbage, finely shredded
  2. 440 g (14 oz) can pineapple slices or 375 g (12 oz) fresh pineapple, chopped
  3. ½ eating apples
  4. 2 teaspoons lemon juice
  5. 90 g (3 oz/ ½ cup) raisins
  6. 60 g (2 oz/ 1/3 cup) salted peanuts
  7. ½ apple, sliced, or pineapple leaves to garnish
  8. DRESSING:
  9. 1 quantity Mayonnaise
  10. 1 teaspoon clear honey
  11. 3 tablespoons pineapple or apple juice
  12. salt and pepper
Method
  • Put cabbage into a large bowl. If using canned pineapple, drain well, reserving the juice, and chop the fruit. Add pineapple to cabbage.
  • Core and chop apples, toss in lemon juice and add to salad with raisins and peanuts.
  • To make the dressing, mix all the ingredients in a bowl, using reserved pineapple juice or apple juice, then pour over the salad. Mix well, then turn into a serving dish. Garnish and serve at once.
