  1. 470 g (15 oz) can chick-peas, drained
  2. 60 ml (2 fl oz/ ¼ cup) virgin olive oil
  3. 3 tablespoons tahini (sesame seed paste)
  4. 2 doves garlic
  5. juice of 1 lemon
  6. salt and pepper
  7. 1 teaspoon paprika
  8. olives and coriander leaves, to garnish
  9. TO SERVE:
  10. carrot sticks or baby carrots celery sticks
  11. radishes
  • Put chick-peas in a blender or food processor with 3 tablespoons of oil, tahini, garlic and lemon juice. Work until smooth, then season.
  • Spoon into a serving bowl or 4 individual dishes. Drizzle remaining oil over and dust with paprika.
  • Garnish and serve with the raw fresh vegetables.
