Ingredients
  1. 1½ tablespoons_____ olive oil
  2. 1_____ onion, chopped
  3. 2_____ stalks of celery, chopped
  4. 3_____ cloves of garlic, peeled and chopped
  5. 1_____ large potato, peeled and cut into chunks
  6. 6 cups_____ of broccoli florets
  7. 4½ cups_____ of vegetable or chicken stock, more if needed
  8. ¼ cup_____ of reduced-fat half-and-half
  9. Salt and pepper_____ to taste
Method
  • Preheat a large pot over medium heat. Add the olive oil, let warm, and then add the onion, garlic, celery, and potato. Sauté until the chopped veggies change slightly in color.
  • Add the broccoli to the pan, then pour the stock over the veggies. Simmer until the vegetables are very tender, about 20 minutes.
  • Transfer soup to a blender and puree, or use an immersion blender to puree in the pot. Return the soup to the pot and add the half-and-half. Cook for another minute or so, then ladle into bowls and serve.
