Ingredients
  1. 440 g (14 oz) can red kidney beans, drained
  2. 185 g (6 oz) frozen sweetcorn, cooked
  3. 1 green pepper (capsicum), seeded and chopped
  4. ½ bunch spring onions, chopped
  5. 2 tablespoons chopped fresh coriander
  6. ½ iceberg lettuce, shredded, if desired
  7. lime slices and parsley sprigs, to garnish
  8. LIME DRESSING:
  9. 60m1 (2 fl oz/1/4 cup) virgin olive oil
  10. juice of ½ lime
  11. 1 clove garlic, crushed
  12. salt and pepper
Method
  • Put the kidney beans, sweetcom, green pepper (capsicum), spring onions and coriander into a bowl.
  • To make the dressing, put all the ingredients into a bowl or screw-top jar and mix well. Pour over the salad and toss together.
  • Line a serving dish with the shredded iceberg lettuce, if desired, and spoon the bean mixture on top. Serve the salad garnished with lime slices and sprigs of parsley.
