Ingredients
  1. 3 cups maida
  2. 1/2 Cup ghee
  3. 2 tbsp Fresh green coriander
  4. 1 Large onion, finely chopped
  5. 1 beaten Egg for each dough sheet
  6. 1/2 Cup water
  7. Salt to taste
  8. For Meat Filling:
  9. 1/2 cup meat mince
  10. 2 tbsp oil
  11. 1 Onion, finely chopped
  12. 1 tbsp Fresh ginger, finely minced
  13. 2 tsp red chilli powder
  14. 2 tsp dhanya powder
  15. 2 tsp turmeric powder
  16. 2 tbsp coriander, finely chopped
  17. 2 tsp green chillies, finely chopped
  18. Salt to taste
  19. 2 tbsp lemon juice
Method
  • To Prepare Meat Filling:
  • 1.Take a saucepan and heat oil.
  • 2.Add chopped onion, salt, ginger, red chilli, dhanya powder and turmeric powder,
  • 3.Stir-fry for about 1 to 2 minutes, add meat mince.
  • 4.Saute with a spatula, cover and cook meat until well browned.
  • 5.Add lemon juice, coriander and green chillies, stir to mix well with meat, promptly remove from the flame.
  • To Prepare Mutabak:
  • 1.Sieve flour and salt into a bowl.
  • 2.Mix ghee, add water gradually and knead till the dough is smooth.
  • 3.Let the dough rest for around 2 to 3 hrs to soften.
  • 4.Make small balls from the dough, oil the work top with ghee and work each ball into a very thin sheet.
  • 5.First flatten with oiled palms, dust with some maida and then thin it by pulling the edges with a rolling pin.
  • 6.Grease the dough sheet with 1 tsp ghee and fold in edges, shape it into a square.
  • 7.Now sprinkle a little flour and roll out into a paper-thin rectangular sheet.
  • 8.Preheat a pan, pour some oil.
  • 9.Pour one beaten egg in the middle of the rectangular sheet and carefully spread it on the sheet.
  • 10.Sprinkle some chopped onions and finely chopped coriander .
  • 11.Spoon about 2 tbsp curried meat filling evenly.
  • 12.Quickly lift the Mutabbaq, using both hands, onto the preheated pan.
  • 13.Cook for about 2 to 3 minutes pouring hot oil with a spoon around the sides until golden brown.
  • 14.Lift Mutabbaq up, and cook the other side until brown.
  • 15.Cut it into pieces as desired.
  • 16.Serve hot with tomato sauce.
  • Note: Cooking Time: 70-75 minuts, Serving: 3-4 persons
