Ingredients
  1. 15 ounce(s) fish, salmon, canned, well drained
  2. 1/2 cup(s) cheese, ricotta, part-skim
  3. 1/4 cup(s) oats, rolled
  4. 2 large egg white(s), (may substitute 1 whole egg)
  5. 2 tablespoon dill weed, fresh, chopped
  6. 1 stalk(s) scallion(s) (green onions), minced, white and green parts
  7. 1 tablespoon lemon zest, zest of 1 lemon (optional)
Method
  • Add the salmon to a large mixing bowl (remove the skin and large bones if desired).
  • Mash with a fork.
  • Add the ricotta, oats, egg whites (or egg), dill, scallion, and lemon zest (if using) and mix well. Form the salmon mixture into 4 patties.
  • Liberally coat a large sauté pan with oil spray, and preheat the pan over medium-high heat. Add the salmon patties and cook 5 to 6 minutes per side, or until golden brown on the outside and cooked through on the inside.
