Ingredients
  1. 500 grams_____ mince
  2. 1 big_____ onion chopped
  3. 1 tbsp_____ full ginger garlic green chilli paste
  4. 4 tbsp_____ roasted chana powder or slightly roasted besan
  5. 1 tsp_____ garam masala powder
  6. 1 tsp_____ cumin powder
  7. 1 tsp_____ coriander powder
  8. 2 tbsp_____ desi ghee
  9. to taste_____salt
  10. 500 grams_____ basmati rice
  11. 2_____ onions sliced
  12. 2 tbsp_____ ginger garlic green chilli paste
  13. handful chopped_____ coriander mint leaves
  14. 1 cup_____ yoghurt
  15. 1 tsp_____ coriander powder
  16. 1 tsp_____ cumin powder
  17. 1/2 tsp_____ red chilli powder
  18. 2 cloves 2 cardomon 4 peppercorns 2 sticks cinnamon
  19. 2 tbsp_____ desi ghee
  20. to taste_____ salt
  21. coal_____ for smoke (optional)
Method
  • Combine mince with chopped onion desi ghee roasted chana powder garam masala coriander cumin salt ginger garlic green chilli paste mix well
  • Shape them into seekh kababs with skewers or u can use pencil to shape shallow fry over medium heat till golden brown from all sides
  • Remove seekh kababs set them aside....
  • In a vessel add oil add whole spices once they puff up add sliced onions once onions are golden remove 1/4 portion for garnishing
  • Then add ginger garlic green chilli paste sautey few seconds once raw smell is gone add coriander cumin salt red chilli powder spices sautey 30 seconds
  • Add chopped coriander mint leaves mix well add yoghurt mix and cook till oil seperates out then add rice washed and 30 minutes soaked mix gently make sure not to break the rice grains
  • Add water double in measure to that of rice boil on high heat for 3 to 4 minutes
  • Once water is reduced little cover and simmer for 10 minutes till all water is absorbed into rice and grains are cooked well
  • Now garnish with fried onions chopped coriander mint leaves prepared seekh kababs give coal smoke (optional step)
  • Cover and and simmer 5 minutes seekh kabab pulao is ready serve with raita kachumber and chutney.
