Ingredients
  1. 500 g (1 lb) turkey escalopes
  2. 2 tablespoons virgin olive oil
  3. 1 small onion, chopped
  4. 125 g (4 oz) fresh or frozen cranberries
  5. grated peel of ½ orange
  6. orange slices and watercress sprigs, to garnish
  7. MARINADE:
  8. juice of 1 lime
  9. 125 ml (4 fl oz/ ½ cup) dry vermouth
  10. 2 teaspoons clear honey
  11. ½ teaspoon dry oregano
  12. salt and pepper
Method
  • Cut the turkey escalopes into thin strips. Mix marinade ingredients together in a bowl. Add turkey strips and marinate for 2 hours.
  • Remove turkey from marinade with a slotted spoon; reserve marinade. Heat oil in a frying pan, add turkey and onion and saute for 5 minutes. Pour reserved marinade into the pan with the cranberries and orange peel and cook gently until the cranberries begin to split. Transfer the mixture to a dish to cool.
  • Stir the salad and spoon into a serving dish. Serve garnished with orange slices and sprigs of watercress.
