Ingredients
  1. For sponge
  2. 250 gm Dry milk
  3. 1 cup Sugar
  4. 1 cup Condensed milk
  5. 1 cup Milk
  6. 2 cup Plain flour
  7. 2 cup Butter
  8. few drops Kewra essence
  9. 2 tsp Baking powder
  10. 2 tsp Baking soda
  11. Ingredients for topping
  12. 1 cup Cream
  13. 1 cup Butter.
  14. 1/2 cup Sugar.
  15. 1/2 cup Cashew nut
  16. 1/2 cup Almonds
  17. 1/2 cup Pistachio
  18. few drops Kewra
Method
  • In a bowl, add a cup of sugar and 2 cups butter and beat well. Then add 250 grams whole dried milk, 1 cup condensed milk, 2 tsp baking powder, 2 tsp baking soda and few drops of kewra essence and mix well. Now add 2 cups plain flour and milk to requirement and beat to form a smooth batter. Grease a mould with some butter and pour batter into it. Bake in a pre heated oven at 180 c for 30 to 35 minutes.
  • In a mixing bowl, add 1 cup cream and 2 to 3 tbsp sugar and beat well. Top the sides of the cake with this cream. Cook remaining sugar and 1/2 cup water till it get thicker. Then add a few drops of kewra essence, 1/2 cup almonds, 1/2 cup pistachios and 1/2 cup cashew nuts and mix. Pour it on the centre of the cake and spread evenly. Bombay cake is ready to serve and enjoy.
