Ingredients
  1. 12 oz. carrots
  2. 2 pints (U.S. 5 cups) Jersey milk 6 oz. sugar
  3. 6 cardamom seeds
  4. FOR DECORATION
  5. almonds and raisins
Method
  • Wash, peel and grate carrots. Boil the milk for about 30 minutes till reduced by half. Add the carrots and cook till mixture thickens. Add the sugar and crushed cardamoms and continue to cook till thick. Decorate with chopped nuts and raisins. Serve hot or cold.
  • Note: Preparation time 15 minutes, Cooking time 1 hour, To serve 4
