Bring milk to the boil in a large, heavy pan. Lower heat and cook till milk begins to thicken (about 45 minutes). Trim the cauliflower and finely chop flowerets. Melt butter in a pan and fry the cauliflower until brown. Add cauliflower and sugar the milk and return to heat. Stir to dissolve sugar and cook till mixture becomes creamy. Add the crushed cardamom seeds. Serve cold.
