Ingredients
  1. • 200ml / 7¼fl oz water
  2. • 225g / 8oz best-quality bitter chocolate and then broken into pieces
Method
  • 1. Put the water and then chocolate into a pan and melt over an average heat, stirring occasionally.
  • 2. Have two bowls ready, one that will sit inside the other. Into the bigger bowl, put some ice and a little water, and place the smaller bowl in it.
  • 3. Pour the melted chocolate into the smaller bowl and whisk with an electric blender until the mixture thickens and takes on the appearance of whipped cream. If you over-whip the chocolate mix, simply tip it back into the pan and start again.
