INGREDIENTS

Oil for frying

1 onion, finely chopped

1 clove garlic, crushed

1-inch fresh root ginger, finely sliced

4 cardamom seeds

6 cloves

1-inch piece of cinnamon

1 level teaspoon turmeric powder 6 green chillis, slit lengthwise

* thick coconut milk from 1 coconut or

3 oz. creamed coconut

salt to taste

4 thick cod or haddock steaks

* Real coconut milk will give the best results.

METHOD

Heat some oil in a big frying pan and fry the onion, garlic and ginger lightly, without browning. Add the cardamoms, cloves and cinnamon. After one minute add the turmeric and green chillis. Stir and cook gently for about three minutes. Now add the coconut milk and salt and bring to the boil. Place the fish carefully in the pan and simmer until cook¬ed. Be careful not to break up the fish. The gravy must be thick.

Note: Preparation time 20 minutes, Cooking time 25-30 minutes, To serve 4
